Overall, for a healthy banana bread with protein powder in it, this was pretty good. It was moist but had a "different" kind of chewy texture to it vs. a bready crumbly texture. I think it needed more sugar, but it was fine!

Ingredients: 3 large bananas, old-fashioned rolled oats, whole wheat flour, vanilla protein powder, plain Greek yogurt, egg, vanilla extract, maple syrup (could use honey or agave), baking soda, baking powder, ground cinnamon, Kosher salt

Tips/Notes:
  • We have oat flour so substituted that at the same weight as 3/4 cups of rolled oats
  • Subbed all purpose white flour for the whole wheat flour it called for
  • Used frozen bananas we kept for this purpose
  • Used vanilla Greek yogurt
  • Added chocolate chunks

Recipe: Southwest Tofu Scramble

This is actually more of a breakfast recipe, but we had it for dinner with a side of a Japanese sweet potato. To be honest, I wasn't looking forward to this dish as the ingredients sound a bit boring (but healthy!), but it was really good -- you must have it with hot sauce. I probably will eat the leftovers in the morning with an overeasy egg on top.

Ingredients: extra-firm tofu, red bell pepper, red onion, kale, olive oil

Sauce Ingredients: turmeric, chili powder, ground cumin, garlic powder, sea salt, water

Serve with cilantro, hot sauce, salsa
