Recipe: Larb with Cabbage

Love this dish!  So much flavor but you can see why from the ingredient list.  It has sweet, sour, salty, spicy and umami flavors, plus crunch from the peanuts. We did change the recipe up just a little bit -- see notes below.

Ingredients: rice, ground pork or beef or lamb, green cabbage, peanuts, scallions, lemongrass, Thai chiles, garlic, shallot, lime juice, fish sauce, mint, vegetable oil, Kosher salt

Tips/Notes:
  • Used lamb -- it's a bit fatty, so use less oil
  • Used butter lettuce instead of cabbage
  • Shredded cabbage and cooked it with the lamb
  • Found Thai chiles (finally!) and wow, it added heat which was great!
  • Add peanuts only at the very end if you think you'll have leftovers as the peanuts will get soggy

Recipe: Lamb Larb

We turned this into a salad

This was a fast and healthy dish to make with a lot of complexity in flavor -- and yet with not many complex ingredients to prep.

Ingredients:  ground lamb, white rice, Bibb lettuce leaves, cucumber, mint, shallot, cilantro, garlic, red Thai chiles, lime juice, fish sauce, demerara sugar or dark brown sugar, lemongrass stalk, salted roasted peanuts, vegetable oil

Tips:
  • Add red pepper to the lemongrass mix
  • I'm not a huge fan of peanuts in dishes so didn't top mine with peanuts
  • Add basil
  • Make extra fish sauce to top the dish
  • Add sriracha on top
  • Didn't have large enough leaves to make lettuce cups, so turned this into a salad!

Spiced Lamb Patties with Nutty Garlic Sauce

Freakin' delicious!
This is one of my favorite recipes we've made in the past few months.
Easy, complex flavors, pretty healthy, yum.

Modifications:
  • Didn't make lamb patties -- just cooked the ground lamb in the pan like ground beef.
  • Used naan instead of pita bread.
Next time:
  • Use a LOT less oil (if any) when cooking the lamb.
  • The garlic in the sauce isn't cooked so has a very strong flavor.  Add the garlic to the lamb instead.
  • Make a yogurt sauce to go with this.
