I love salads that have potatoes and green beans in them -- this hit the spot and is definitely a restaurant-worthy $28 salad. Note that we used salmon instead of chicken. I may not need to order this in a restaurant anymore!

Ingredients based on our recipe: salmon, mixed greens, potatoes, haricots verts, radish, shallot, garlic, Sherry vinegar, Dijon mustard, thyme, sugar, olive oil, black pepper

We made this plant based using Impossible Chicken. Good salad, but the dressing was a bit acidic for me. Overall, we liked it and will make it again.

Vinaigrette ingredients: olive oil, apple cider vinegar, lime peel, lime juice, cilantro, ground cumin, Dijon mustard, garlic powder, sea salt, black pepper, cayenne pepper

Salad ingredients: lettuce, chicken, black beans, cherry tomatoes, corn, red bell pepper, red onion

Tips/Notes:
  • Used Impossible Chicken
  • Added queso fresco

Lovely salad by then Baccarat Hotel chef Shea Gallante, so definitely restaurant-worthy. Love all of the textures and flavors!!! The Gruyere cheese is a must.

Ingredients: frisee, corn, scallions, pancetta, cremini mushrooms, chives, Gruyere cheese, extra-virgin olive oil, lemon zest, lemon juice, honey, apple cider vinegar, Kosher salt, pepper

Tips/Notes:
  • Used mixed greens instead of frisee
  • Used frozen corn
  • Used baby bella mushrooms instead of cremini mushrooms
  • Next time, need to shave the Gruyere cheese on to the salad.

Really good(!) and I like the cashew chickpea mix. Interesting ingredients that work together -- this is restaurant worthy.

Cashew-Chickpea Crunch Ingredients: chickpeas, cashews, cashew butter, sesame seeds, miso, tamari, ginger, extra-virgin olive oil

Salad Dressing Ingredients: unseasoned rice vinegar, ginger, sesame oil, extra-virgin olive oil, Kosher salt, pepper

Other Salad Ingredients: Savoy or red cabbage, radishes, cilantro, mandarin oranges 


Tips/Notes:
  • Used almond butter instead of cashew butter
  • Used mixed greens instead of cabbage
  • Used Cuties oranges

So delicious!!! Lots of veggies and loved our additions -- definitely adding this to the rotation. So flavorful and loved all of the textures. We've made a recipe like this before, but this was GOOD.

Ingredients: ramen, shrimp, natural peanut butter, cucumber, radish, cilantro, mint, ginger, garlic, hot sesame oil, vegetable oil, unseasoned rice vinegar, soy sauce, maple syrup, Kosher salt, pepper

Tips/Notes:
  • Used crunchy peanut butter since we didn't have creamy which the recipe called for
  • Used avocado oil instead of vegetable oil
  • Used 4 garlic cloves instead of 10-12
  • Added edamame
  • Added tofu -- make 2x next time
  • Made 1.5x the dressing, but note didn't increase the amount of avocado oil
  • Served with vegetable egg rolls

Really great recipe! I think this is the best taco beef recipe we've made -- so flavorful and moist with the tomato sauce.

Salad Ingredients: lettuce, tomato, avocado, black beans, black olives, extra-sharp Cheddar

Beef Ingredients: ground chuck, medium onion, tomato sauce, garlic, serrano chiles, chili powder, ground cumin, olive oil, salt, pepper

Dressing Ingredients: lime juice, cilantro, sugar, chili powder, ground cumin, olive oil, salt, pepper

Tips/Notes:
  • Used Impossible Beef
  • Heated up the black beans

Recipe: Spicy Bulgur in Lettuce Cups

This grew on me! The dressing wasn't that exciting, but overall the flavors were good ESPECIALLY with the falafel added. The lettuce wasn't strong enough to hold everything together so it ended up being a salad.

Salad Ingredients: Little Gem lettuce or romaine, bulgur, walnuts, tomatoes, cucumber, scallions, parsley, mint, pomegranate seeds, Kosher salt, black pepper

Dressing Ingredients: pomegranate molasses, double-concentrated tomato paste, extra-virgin olive oil, lemon juice, Aleppo-style pepper, biber salcasi (Turkish hot pepper paste) or more Aleppo, Kosher salt, black pepper

Tips/Notes:
  • Served falafel with it
  • Didn't have biber salcasi so used more Aleppo pepper
  • Substituted date syrup for the pomegranate molasses

I saw this salad advertised in an email from Mendocino Farms. As I read through the ingredient components, I thought to myself, "We can make that!" It turned out GREAT!!! A $14.35 salad but ours is all ORGANIC!

Ingredients:
  • Shaved, roasted chicken breast (we used Impossible chicken that we air fried)
  • Sweet peaches
  • Romaine, kale and mixed greens
  • Pickled red onions
  • Fresh mint
  • Shaved fennel
  • Marinated goat cheese (we used honey goat cheese)
  • Honey roasted almonds (to cut back on calories and more sweetness, we used Marcona almonds)
  • Drizzle of hot peach honey
  • Farmhouse vinaigrette (made our own basic vinaigrette)

Recipe: Kale Caesar Salad with Sweet Potatoes and Crispy Chickpeas

Overall, I didn't like this salad because of the raw kale and brussels sprouts -- I think they need a little "cook" on them. Also, the salad flavors were overall muddy as some Half Baked Harvest recipes are, but the Parmesan Tahini Dressing (the "Caesar" dressing) was really good and tasted like a Caesar dressing.

I would consider making this again but with a little "cook" on the kale and brussels sprouts or maybe mixing in some mixed greens.

Ingredients: sweet potatoes, chickpeas, kale, brussels sprouts, avocado, chipotle chili powder, smoked paprika, extra virgin olive oil, Kosher salt, pepper

Parmesan Tahini Dressing Ingredients: lemon juice, Parmesan, Dijon mustard, tahini, Worcestershire sauce, garlic, parsley, extra virgin olive oil, Kosher salt, pepper

Tips/Notes:
  • Add in some mixed greens
  • Lessen the amount of chipotle chili powder and smoked paprika as it was SPICY!

Recipe: Sweet Potato Kale Salad with Creamy Honey Mustard Dressing



GREAT salad that is hearty, filling and delicious!!! I loved the various flavors from the SPICINESS on the sweet potatoes and chickpeas to the herbs, crunch of the cucumbers, saltiness from the feta and creaminess of the avocado.  We definitely will be making this again.

Ingredients: sweet potatoes, chickpeas, cucumbers, avocado, feta cheese, mixed herbs (basil, dill, parsley), extra virgin olive oil, sesame seeds, chipotle chili powder, smoked paprika, onion powder, cumin, Kosher salt, black pepper

Honey Mustard Dressing Ingredients: extra virgin olive oil, dijon mustard, stone ground mustard, honey, tahini, lemon juice, champagne or apple cider vinegar

Tips/Notes
  • Made 2/3 of the dressing 
  • It's spicy! Use a little less chipotle chile powder
  • For the herbs, used basil and parsley (actually, decided the 2nd time not to use parsley)
  • Served with falafel

Recipe: Spicy Southwest Quinoa Bowl



Delicious and healthy dinner!!! Great for a weeknight meal -- just remember to start early to roast the sweet potatoes.

Main Ingredients: quinoa, sweet potatoes, black beans, cilantro, avocado, queso fresco, tortillas, taco seasoning, lime, olive oil, salt, pepper

Mango Slaw Ingredients: mango, Tuscan kale, jalapeno, cilantro, olive oil, lime, sat

Charred Tomatillo Vinaigrette: tomatillos, green chiles, cilantro, olive oil, lime, salt

Tips/Notes:
  • Made our own taco seasoning but may buy it next time
  • Had this with quinoa chips instead of tortillas
  • Oops - we forgot the avocado!
  • Made half of the slaw which was enough
  • Didn't make the Charred Tomatillo vinaigrette -- instead, used jarred green tomatillo salsa

This was a good salad in a pinch! I felt like we were on an episode of Chopped where I was trying to find things to put together for a meal. We used what we had in the fridge like peaches instead of mango, queso fresco instead of feta.

Ingredients: bulgur, salad greens, garbanzo beans, mango, feta, red onion, lime juice, canola oil, ground cinnamon, ground cumin, cayenne pepper, mint, salt 

Tip:
  • Served with falafel
  • Added a little more oil as the dressing was pretty strong in flavor

Recipe: My Favorite Salad I Created!

My Favorite Salad
I took ingredients that I love and put them together in an amazing salad.

Ingredients:
  • Mixed greens
  • Green beans
  • Hearts of palm
  • Avocado
  • Pistachios
  • Dates
  • A vinaigrette
I didn't have any fingerling potatoes, but that would be a delicious addition and perhaps cucumbers and red onion.

In restaurants, they often also add either rotisserie chicken or salmon.

Recipe: Fall Harvest Quinoa Salad



Overall a pretty good salad, but like most of Half Baked Harvest recipes, the flavors sometimes taste muddied. BUT, I would make this again...

Ingredients: quinoa, delicata or acorn squash, baby kale, apple, pomegranate arils, roasted pistachios or toasted pumpkin seeds, halloumi cheese, avocado, maple syrup, cinnamon, cayenne pepper, olive oil, Kosher salt, pepper

Dressing Ingredients: tahini, lemon juice, apple cider vinegar, turmeric, olive oil, Kosher salt, pepper

Tips:
  • Used BOTH delicata and also acorn squash. Will cut them thicker next time so there is more "bite" to them
  • Didn't use pomegranate arils (grocery store was out!)
  • I thought the baby kale might need to be sauteed so I did -- next time I won't
  • Used roasted pistachios
  • Make 2/3 of the dressing recipe
  • Next time, need to add more heat -- more cayenne and/or add red pepper flakes

Recipe: The Mean Green Detox Salad

Super healthy and hearty salad! This does take a little time to make as there are a lot of components. With two people making it, it's fine time-wise for a weekday meal -- just make sure to allocate 30 min to bake the chickpeas (and falafel that we added). This is a restaurant-worthy salad ~ I can see this easily being $18 in a restaurant.

Notes/Tips:
  • Added 1 more tbsp of EVOO to the dressing as the dressing was super thick
  • Used 2 cans of chickpeas/garbanzo beans
  • Didn't use any coconut
  • Steamed some frozen broccoli instead of using fresh
  • Didn't add parsley, hemp seeds or chia seeds
  • Used regular Parmesan
  • Served falafel on the side

The photo above doesn't show the apples because we ran out of apples when I took this photo the second time we made this. Great salad to serve at a dinner party with lots of textures.

Salad Ingredients: spinach, Honeycrisp apples, blueberries, feta cheese, sliced almonds, Kosher salt, black pepper

Warm Maple Dressing Ingredients: avocado oil, balsamic vinegar, pure maple syrup, Dijon mustard, honey, smoked paprika, Kosher salt, black pepper

Tips:
  • Use half of the balsamic vinegar (tasted too vinegar-y)
  • Used crushed marcona almonds and mixed greens since we had them on hand
  • Apples do turn brown because of the dressing so put on top when serving

Recipe: Buffalo Chicken Quinoa Salad with Broccoli

Delicious! Tastes like it would be unhealthy but it's much better for you than getting a dish like this in a restaurant. We had this hearty salad along with a Japanese/purple baked potato.

Ingredients: quinoa, chicken, broccoli, carrots, cabbage, blue cheese, avocado, green onion

Buffalo Dressing Ingredients: hot sauce, olive oil, seasoned salt

Tips:
  • Used Impossible Chicken Patties for the chicken (cooked in the air fryer so they were crispy!)
  • Go light/easy on the seasoned salt

I really liked this super simple bowl that we served with falafel. Look how short and simple the ingredients list is! The mint, avocado and pistachios are key to the dish.

Ingredients: quinoa, avocado, mint, toasted pistachios, cherry tomatoes, scallions, lemon juice, extra-virgin olive oil, Kosher salt, pepper, flaky sea salt

Tips/Notes:
  • As noted above, served with falafel
  • "Grilled" the scallions and tomatoes on the stove -- may want to double the amount OR reduce the amount of quinoa

Recipe: Tomato Salad with Blue Cheese and Crispy Shallots

This salad was fine, not amazing which is why I rated it 4.5 stars. It's super simple and is a good salad to make when we have extra blue cheese and also crispy onions (we had some fancy ones from making green bean casserole). We always have lettuce and tomato and the dressing ingredients on hand.

Ingredients: Bibb lettuce leaves, mixed tomatoes, blue cheese, fried shallots or onions, sherry vinegar or red wine vinegar, Dijon mustard, honey, extra-virgin olive oil

Notes:
  • Used what we had in the fridge: romaine lettuce and cherry tomatoes
